Ingredients:
  • 2 slices white bread
  • 62.50 ml basil leaves
  • 36.40 gm olive oil
  • 20g parmesan cheese, grated
  • 4 (200g each) ling fish fillets (see note), skin off, bones removed
  • 500g bottle grilled summer vegetable pasta sauce (we used Five Brothers brand)
  • 1 bunch steamed broccolini, to serve
Instructions:
  • Preheat your oven to 180°C and lightly grease a 7cm-deep, 24cm square baking dish.
  • Pulse bread in a food processor until roughly chopped. Add basil and oil, then process until a fine breadcrumb mixture forms. Transfer to a bowl and mix in the parmesan.
  • Season the fish generously with a pinch of salt and pepper. Arrange the fish in a single layer in the baking dish. Cover the fish with a delicious pasta sauce. Sprinkle the flavorful breadcrumb mixture over the fish.
  • Bake the fish until it's perfectly cooked, which should take 20 to 30 minutes depending on its thickness. Serve with broccolini on the side.
