Try our easy and flavorful parmesan-crumbed baked fish for a quick and healthy weeknight meal.
Ingredients:
  • 125.00 ml fresh multi-grain breadcrumbs
  • 62.50 ml flat-leaf parsley leaves, finely chopped
  • 82.50 ml finely grated parmesan cheese
  • 1 tsp finely grated lemon rind
  • 4.60 gm olive oil
  • 4 (about 200g each) thick white fish steaks (such as blue eye or kingfish)
  • olive oil cooking spray
  • Steamed green beans, to serve
  • Boiled chat potatoes, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200°C (180°C for fan-forced). In a bowl, mix breadcrumbs, parsley, parmesan, lemon rind, salt, and pepper. Drizzle with oil and stir until breadcrumbs are evenly coated.
  • Coat fish fillets evenly with breadcrumb mixture on the flesh side.
  • Lay the fish, skin-side down, on a baking tray and lightly coat with oil. Bake until the crumbs are a light golden color and the fish is just cooked through, about 15 minutes. Serve with steamed beans, potatoes, and lemon wedges.
