Ingredients:
  • 84.98 gm milk
  • 4 slices champagne leg ham
  • 23.40 gm wholegrain mustard
  • 8 (110g each) chicken thigh fillets
  • 500.00 ml fresh breadcrumbs
  • 62.50 ml grated parmesan cheese
  • 125.00 ml plain flour
  • Alfa One rice bran oil cooking spray
  • Steamed green beans, to serve
Instructions:
  • Preheat the oven to 220°C/200°C fan-forced and line a large baking tray with baking paper. Spread each ham slice with mustard, then tightly roll them up and cut each roll in half. Lay a chicken thigh fillet flat on a chopping board, place a piece of ham in the center, and roll up the chicken to enclose the filling. Secure with toothpicks and repeat with the remaining ingredients.
  • On a plate, mix breadcrumbs and parmesan. Place flour on a separate plate. In a shallow bowl, whisk together milk and egg.
  • Dust a piece of chicken in flour, removing any extra. Dip it in the egg mixture, then coat it in breadcrumbs. Transfer to a prepared tray. Repeat the process with the rest of the chicken, flour, egg, and breadcrumbs.
  • Coat chicken with a light spray of oil. Bake until golden and cooked through, about 35 to 40 minutes. Remove and discard toothpicks before serving with beans.
