Try these tasty parmesan-crusted chicken fillets for a family favorite in no time!
Ingredients:
  • 80g parmesan
  • 15g breadcrumbs
  • 4 x 180g chicken breast fillets
  • 50g unsalted butter, melted
  • 4 truss tomatoes, roughly chopped
  • 2 eschalots, thinly sliced
  • 1/2 bunch flat-leaf parsley, leaves picked
  • 20.00 ml red wine vinegar
  • 5.00 gm caster sugar
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to a scorching 250°C and prep a baking tray with a non-stick baking paper lining.
  • In a bowl, mix together the parmesan and breadcrumbs. Brush the chicken with butter, season generously, and coat with the crumb mixture. Place on a lined baking tray and bake for 15 minutes until golden and cooked through.
  • In a bowl, mix together the tomato, shallot, parsley, vinegar, and sugar. Season with salt and pepper to taste.
  • Serve the chicken alongside zesty tomato salsa and fresh lemon wedges for a burst of flavor.
