Parsley pesto garlic breads

Convenient make-ahead side dish to simplify your cooking.
Ingredients:
  • 375.00 ml fresh flat-leaf parsley leaves
  • 62.50 ml pine nuts, toasted
  • 125.00 ml finely grated parmesan
  • 3 garlic cloves, crushed
  • 125g butter, softened
  • 2 x 30cm baguettes
Instructions:
  • Combine parsley, pine nuts, parmesan, and garlic in a food processor and blend until nearly smooth. Add butter and pulse until mixed. Season generously with salt and pepper.
  • Preheat your oven to 200C/180C fan-forced. Slice the baguette into 2cm-thick slices without cutting all the way through. Spread the butter mixture on the cut sides of the bread and wrap each baguette in foil.
  • Lay the bread slices on a baking tray and bake until they turn golden and crisp, about 18 to 20 minutes.
