Flavorful walnut and parsley pesto reminiscent of garlic butter, best made in a mortar and pestle. Perfect on bread, pasta, pizza, or chicken for a versatile touch.
Ingredients:
  • 4 cloves garlic, sliced
  • 1 large pinch kosher salt, plus more to taste
  • 0.5 cup chopped raw walnuts
  • 0.5 cup chopped Italian parsley
  • Juice from one lemon
  • 2 tablespoons extra virgin olive oil
  • water, if needed
Instructions:
  • In a mortar, combine garlic and salt, then crush into a paste using a pestle for 5 to 8 minutes. Mix in walnuts and continue mashing for another 5 to 8 minutes until you achieve your desired texture. Add parsley, blend with the walnut/garlic mixture for about 4 minutes. Incorporate lemon juice and olive oil, stirring until a thick, well-blended mixture forms in 8 to 10 minutes. Taste, adjust seasonings, and whisk in a tablespoon of water if needed.
