Walnut Parsley Pesto

Zesty parsley and walnut pesto for a unique twist on a classic favorite.
Ingredients:
  • 1 cup shelled walnuts, about 3 1/2 ounces
  • 2 cups chopped parsley, about 1 bunch
  • 1/2 cup grated pecorino or parmesan cheese
  • 3 garlic cloves, roughly chopped
  • 1/2 teaspoon salt
  • 1/2 cup extra virgin olive oil
Instructions:
  • Combine walnuts, parsley, cheese, garlic, and salt in a food processor. Pulse briefly to blend the ingredients, scrape down the sides, then pulse again.
  • While the machine is running, slowly pour in the olive oil and blend for about 20-30 seconds until the oil is fully incorporated. Use immediately or refrigerate covered with plastic wrap. Enjoy with pasta or spread on bread or toast. Feel free to share your feedback and rating below!
