Garlic parsley sautéed red potatoes with onion.
Ingredients:
  • 1.5 pounds new red potatoes
  • 1 tablespoon vegetable oil
  • 1 clove garlic, crushed
  • 1 cup chicken broth
  • 1 cup chopped fresh parsley
  • 0.5 teaspoon ground black pepper
Instructions:
  • Peel a strip of skin from around the center of each potato and soak in cold water. Let them sit.
  • In a large skillet over medium-high heat, saute onion and garlic until tender, about 5 minutes. Stir in broth and 3/4 cup of parsley, mix well, and bring to a boil.
  • Add the potatoes to a pot of salted water and bring to a boil. Reduce heat, cover, and simmer for 10 minutes until potatoes are tender.
  • Transfer the potatoes to a serving bowl using a slotted spoon. Add black pepper to the skillet and stir. Pour the peppered sauce over the potatoes and sprinkle with the remaining parsley.
