Delicious parsley potatoes pair perfectly with pork or chicken. Fresh herbs and seasonings brighten the dish for a simple and flavorful meal.
Ingredients:
  • 0.5 cup butter, cubed
  • 2 pounds red potatoes, halved
  • 1 tablespoon minced onion, or to taste
  • 2 tablespoons minced fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and melt the butter in a large baking dish in the warming oven.
  • Take the baking dish out of the oven. Mix the potatoes and onion with the butter until they are well coated, ensuring a golden and slightly crispy finish.
  • Once the potatoes are tender, after about 40 minutes in the preheated oven, take them out and generously sprinkle with parsley, salt, and pepper. Mix well until fully coated.
