Parsnip & pear puree

"Pear-infused parsnip puree enhances pork dishes like sausages, cutlets, or roasted belly."
Ingredients:
  • 6 (about 800g) parsnips, peeled, coarsely chopped
  • 1 Red Delight potato, peeled, coarsely chopped
  • 2 Packham or Beurre Bosc pears, peeled, cored, coarsely chopped
  • 4 fresh thyme sprigs
  • 20g Butter
  • 80-125ml (1/3-1/2 cup) pouring cream
Instructions:
  • In a saucepan, combine parsnip, potato, pear, and thyme. Cover with cold water and bring to a boil over high heat. Simmer uncovered for 20 minutes until very tender. Drain and remove thyme before serving.
  • Transfer the parsnip mixture to a food processor. Add the butter and blend until smooth. Gradually pour in cream until you achieve a silky puree.
  • Return to the pan over gentle heat, stirring for 2 minutes or until warmed. Season to taste.
