Pressure cook jerk chicken breasts in zesty citrus marinade with soy sauce, curry powder, and coconut oil for a flavorful meal.
Ingredients:
  • 1 cup water
  • 0.5 cup citrus marinade (such as Goya® Mojo Criollo)
  • 0.25 cup apple cider vinegar
  • 3 tablespoons Jamaican jerk seasoning
  • 2 tablespoons coconut oil
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 2 teaspoons minced garlic
  • 1 teaspoon curry powder
  • 6 large skinless, boneless chicken breast halves
Instructions:
  • In an electric pressure cooker, mix water, citrus marinade, apple cider vinegar, jerk seasoning, coconut oil, olive oil, soy sauce, garlic, salt, and curry powder. Add chicken breasts, seal the lid, and set to high pressure for 10 minutes following the manufacturer's guidelines. Let pressure build for 10 to 15 minutes before serving.
  • Carefully quick-release pressure following manufacturer's instructions for about 5 minutes. Unlock and remove the lid.
