Passionfruit and coconut muffins

Wholesome, easy 3-step muffins - kid-friendly and perfect for spring lunches!
Ingredients:
  • 160g self-raising flour
  • 150g self-raising flour
  • 250ml passionfruit
  • 125ml buttermilk
  • 80ml maple syrup
  • 1 Free Range Egg
  • 60ml canola oil
  • 7.80 gm shredded coconut
Instructions:
  • Preheat your oven to 180°C. Line a 12-hole muffin pan with paper cases that each hold ⅓ cup (80ml). In a large bowl, create a well in the center of the combined flour.
  • Combine passionfruit pulp, buttermilk, maple syrup, and egg, whisking until mixed. Fold this mixture into the flour and oil until just combined. Distribute evenly among paper cases and top with coconut.
  • Bake for 25 minutes or until a skewer inserted in the centers comes out clean. Then transfer the muffins to a wire rack to cool slightly before serving warm or at room temperature.
