Bake delicious muffins for Australia's Biggest Morning Tea fundraiser today - with or without icing, they're a hit!
Ingredients:
  • 300.00 gm self-raising flour, sifted
  • 107.50 gm caster sugar
  • 100g white chocolate, chopped
  • 125g butter, melted, cooled
  • 84.98 gm milk
  • 2 eggs, lightly whisked
  • 62.50 ml passionfruit pulp
  • 4.40 gm vanilla extract
  • 187.50 gm pure icing sugar
  • 10.00 gm hot water
  • 30.00 ml passionfruit pulp
Instructions:
  • Preheat your oven to 200°C and lightly grease a 12-hole muffin pan with 1/3-cup capacity.
  • In a bowl, mix together the flour, sugar, and chocolate, then create a well in the center.
  • Combine butter, milk, egg, passionfruit, and vanilla in a jug, whisk until smooth. Pour mixture into dry ingredients, gently fold until combined. Fill muffin holes three-quarters full with batter. Bake for 15-20 minutes or until a skewer comes out clean. Allow to rest in the pan for 5 minutes, then transfer to a wire rack.
  • Create a luscious passionfruit icing by whisking together icing sugar, water, and passionfruit until velvety. Drizzle generously over muffins, let it cascade down the sides, then let it set. Present and enjoy!
