Passionfruit and white chocolate spoon cake recipe

Indulgent white chocolate and tangy passionfruit cake, irresistibly crumbly and perfect for any occasion. Enjoy spoonful after spoonful of sweet, buttery goodness that's impossible to resist. Perfect for gatherings with loved ones or casual hangouts.
Ingredients:
  • 300g (2 cups) self-raising flour
  • 140g (2/3 cup) caster sugar
  • 185g butter, melted, cooled
  • 250ml (1 cup) milk
  • 1 egg, lightly whisked
  • 180g block white chocolate, roughly chopped
  • 80ml (1/3 cup) fresh passionfruit pulp, plus extra to serve
  • Cream or ice cream (optional) to serve
Instructions:
  • Preheat the oven to 180C/160C fan-forced and generously grease a 6-cup, 5cm-deep ovenproof dish.
  • In a large bowl, mix flour and sugar, creating a well in the center. Add butter, milk, and egg, gently combine. Fold in white chocolate, then spoon mixture into prepared dish.
  • Drizzle passionfruit pulp over the top and gently swirl with a skewer. Bake for 40 minutes until golden (the center may remain slightly soft). Serve warm, topped with extra passionfruit, and a dollop of cream or ice cream, if desired.
