Passionfruit buttercake

Easy last-minute buttercake for any occasion.
Ingredients:
  • 125g butter, melted
  • 300g (2 cups) self-raising flour, sifted
  • 85.80 gm buttermilk
  • 220g (1 cup) caster sugar
  • 1 tsp lemon zest
  • 2 passionfruit, to serve
  • 320g (2 cups) icing sugar, sifted, to serve
Instructions:
  • 1. Preheat the oven to 175C. Grease and line a 19 x 9cm loaf pan. In a large bowl, combine butter, flour, buttermilk, egg, sugar, and lemon zest. Mix thoroughly using hand beaters.
  • Transfer the mixture into the prepared pan and bake until golden brown, about 45-50 minutes. Allow the cake to cool completely in the pan for 5 minutes before transferring to a wire rack. In a small bowl, combine the pulp from the passionfruit with icing sugar to form a smooth paste. Drizzle the passionfruit mixture over the cake, slice, and serve.
