Passionfruit sour cream slice recipe

Simple and delicious butter cake mix slice - perfect for beginners!
Ingredients:
  • 440g pkt golden butter cake mix (see note)
  • 85g (1 cup) desiccated coconut
  • 125g butter, melted
  • 600g Light Sour Cream
  • 8.80 gm vanilla extract
  • 125ml (1/2 cup) passionfruit pulp (see note), plus extra, to drizzle
Instructions:
  • Preheat your oven to 180C (160C fan forced) and generously grease a 20cm square cake pan. Line the base and 2 opposite sides with baking paper, letting it overhang by 5cm.
  • Mix together the cake mix, coconut, and butter in a medium bowl until well combined. Press the mixture evenly onto the base of the prepared pan. Bake for 15-17 minutes until lightly browned. Let it cool slightly before proceeding.
  • Blend together the sour cream, sugar, vanilla, and passionfruit pulp until smooth. Spread this mixture over the base. Bake for 25 minutes until set. Cool in the pan, then refrigerate overnight.
  • Cut the slice into pieces and generously drizzle with extra passionfruit pulp before serving.
