Ingredients:
  • Fresh flowers, to decorate
  • 500g butter, softened
  • 430g caster sugar
  • 40.00 ml finely grated lemon rind
  • 8 eggs
  • 450g self-raising flour
  • 60ml lemon juice
  • 425g sour cream
  • 500g cream cheese, at room temperature
  • 150g icing sugar mixture
  • 125ml passionfruit
  • 55g caster sugar
Instructions:
  • Preheat your oven to 180°C and prepare two 22cm round cake pans by greasing and lining them with baking paper.
  • Using an electric mixer, whip together butter, caster sugar, and lemon rind until light and fluffy. Incorporate eggs one by one, ensuring thorough mixing each time. Gently fold in the flour. Finally, mix in the lemon juice and 1 cup (235g) sour cream until just blended.
  • Divide the mixture evenly into the prepared pans and gently smooth the top. Bake in a preheated oven for 45 minutes or until a skewer inserted in the middle comes out clean. Let them sit for 5 minutes after taking them out of the oven, then transfer to a wire rack to cool completely.
  • Combine fresh, tangy passionfruit and sweet sugar in a cozy saucepan over gentle heat. Stir and simmer for 5 minutes until the sugar melts. Increase the heat, let it gently bubble for 2 more minutes until the syrup slightly thickens. Take it off the heat and let it cool down completely.
  • In an electric mixer, whip cream cheese and remaining sour cream until fluffy. Gradually add icing sugar and mix until fully combined.
  • **Elevate your cake by delicately slicing each layer in half using a serrated knife. Start by placing one layer on a serving plate and generously drizzling it with one-third of the tantalizing passionfruit syrup. Add a luscious layer of cream cheese icing, then repeat this enticing process with the remaining cake layers. Finish by adorning the top with beautiful fresh flowers for a stunning presentation.**
