Triple layer pavlova cake

Indulge in a decadent, texturally diverse pavlova experience in every delicious bite!
Ingredients:
  • 5 medium egg whites
  • 5.00 gm cornflour
  • 20.00 gm caster sugar
  • 2 tsp slivered almonds, finely chopped, toasted
  • 225g fromage frais, vanilla bean
  • 600g reduced-fat ricotta cheese
  • 1 tsp vanilla bean paste
  • 2 medium kiwifruit, peeled, thinly sliced
  • 250g fresh strawberries, thinly sliced
  • 2 medium bananas, thinly sliced
  • 2 medium passionfruit
Instructions:
  • Preheat the oven to 120°C. Line 3 baking trays with parchment paper and mark a 20cm circle on each. Place the paper circle-side down on the trays.
  • Using electric beaters, whip the egg whites in a pristine, dry bowl until soft peaks form. Gradually add the sugar, one tablespoon at a time, beating thoroughly after each addition until the sugar dissolves completely. Gently fold in the cornflour until fully incorporated.
  • Use a spatula to spread the mixture into circles on the prepared trays. Bake for 1 hour or until firm and dry. Let it cool in the still-warm oven with the door slightly open.
  • Prepare a baking tray lined with parchment paper. Heat up the extra sugar in a small saucepan over low heat until it dissolves and turns into caramel, stirring constantly for 1-2 minutes. Remove from heat, then mix in the almonds and spread the mixture onto the lined tray. Let it cool and harden before breaking it into pieces.
  • Combine the fromage frais, ricotta, and vanilla in a food processor and blend until smooth.
  • Remove the paper from the meringue discs and place one disc on a serving plate. Layer one-third of the cream mixture, followed by two-thirds of the kiwifruit, and one-third each of the strawberry and passionfruit. Add another meringue disc, half of the remaining cream mixture, two-thirds of the banana, and half of the remaining strawberry and passionfruit. Place the remaining disc and cream mixture on top. Garnish with the remaining kiwifruit, strawberry, banana, and passionfruit. Sprinkle with almond shards before serving.
