Perfect for meal prepping, easily scale up for larger portions!
Ingredients:
  • 250.00 ml fresh passionfruit pulp (about 12 passionfruit)
  • 160g unsalted butter, chopped
  • 215.00 gm caster sugar
  • 6 egg yolks
Instructions:
  • Pass the passionfruit pulp through a sieve into a bowl, pressing to extract as much juice as possible. Add half of the seeds to the bowl and discard the rest. In a medium saucepan over low heat, gently stir the passionfruit mixture with butter and sugar until the butter melts and the sugar dissolves (ensure it doesn't get too hot).
  • Whisk in egg yolks until the mixture slightly thickens over 8-10 minutes (be careful not to boil or overheat to prevent curdling - it will continue to thicken as it cools). Transfer to warm sterilized jars, seal tightly, and chill in the fridge for up to 8 weeks.
