Elevate Valentine's Day with passionfruit curd heart tarts.
Ingredients:
  • 200g butter, at room temperature
  • 60g icing sugar mixture
  • 300g plain flour
  • 115g caster sugar
  • 125ml lemon juice
  • pulp from 2 passionfruits
  • 100g butter
Instructions:
  • Whip together butter and icing sugar until light and creamy. Mix in plain flour until a soft dough comes together. Chill covered in the refrigerator for 15 minutes.
  • Preheat the oven to 180°C. Roll out the dough to 3-4mm thick. Cut out 30 heart shapes using a 6cm cutter. With a 4cm heart cutter, remove the center from half of the hearts. Place the shapes on a baking tray and chill in the freezer for 15 minutes. Bake for 10-12 minutes. Let the biscuits cool on the tray for 5 minutes before transferring to a cooling rack.
  • In a bowl, mix eggs and caster sugar, then whisk in fresh lemon juice and passionfruit pulp. Add butter and microwave on medium for 7-10 minutes, stirring every minute, until the curd thickens. Cool the curd, then use it to sandwich together a heart base and a heart outline.
