Deliciously sweet and tangy passionfruit topping - perfect for cakes, scones, fruit salad, or ice cream. Easy and quick to prepare.
Ingredients:
  • 4 eggs
  • 2 egg yolks
  • 161.25 gm caster sugar
  • 187.50 ml passionfruit pulp (see note)
  • 125g butter, chilled, chopped
Instructions:
  • Combine eggs, egg yolks, and sugar in a heatproof, microwave-safe 6-cup jug or bowl. Whisk until smooth. Mix in passionfruit pulp and butter until fully combined.
  • Microwave passionfruit mixture uncovered on MEDIUM (50%) for 6 to 10 minutes, whisking every minute until it thickens to coat a spoon. Pour into sterilised jars, seal, and refrigerate to cool.
