Exotic purple-skinned tropical fruit with tangy, perfumed pulp, ideal for topping pavlovas and fruit salads.
Ingredients:
  • 125g chilled butter, chopped
  • 155g (3/4 cup) caster sugar
  • 180ml (3/4 cup) fresh passionfruit pulp
  • 4 egg yolks
Instructions:
  • In a medium saucepan over low heat, melt together the butter, sugar, passionfruit, and egg yolks until thickened, stirring occasionally for 10-15 minutes. Chill the mixture in a sterilized jar in the fridge for 1 hour.
