Passionfruit custard slice

Easy and delicious custard and passion fruit slice made with Arnott's biscuits!
Ingredients:
  • 1 1/2 x 200g packet Lattice biscuits
  • 42.90 gm custard powder
  • 515.00 gm milk
  • 53.75 gm caster sugar
  • 150.00 gm icing sugar mixture
  • 1 passionfruit, halved
Instructions:
  • Prepare a 3cm-deep, 16.5cm x 26cm slab pan by greasing it and lining the base and sides with baking paper, leaving a 2cm overhang at both long ends. Arrange 12 biscuits in a single layer to cover the base of the pan.
  • In a saucepan, mix custard powder with 1/4 cup of milk until smooth. Gradually add the remaining 1 3/4 cups of milk, then stir in sugar. Place pan over medium heat and cook, stirring constantly, until custard boils. Keep stirring for 2 more minutes. Remove from heat, cover custard with plastic wrap, and let it cool for 30 minutes.
  • Drizzle warm custard generously over a layer of biscuits, then add another layer of 12 biscuits on top. Chill in the refrigerator for 1 hour or until the custard is set.
  • Sift icing sugar into a bowl, then add 1 tablespoon of passionfruit pulp. Stir until a thick icing forms, adding more pulp if needed. Spread the icing over the slice, refrigerate until set for about an hour. Cut into squares following the biscuit shapes, then serve.
