Ingredients:
  • 12 passionfruit, pulp removed
  • 1/2 small rockmelon
  • 1/2 small honeydew melon
  • 4 ripe apricots, washed lime cardamom syrup
  • 4 limes, juiced
  • 40.00 gm caster sugar
  • 2 cardamom pods, lightly crushed
Instructions:
  • Spoon the passionfruit pulp into 6 serving glasses and let it freeze uncovered in the freezer for at least 1 hour until solid.
  • Prepare the rockmelon and honeydew melon by removing the seeds and peeling them. Cut the flesh into pieces. Halve the apricots, remove the stones, and slice each half into 3 wedges. Mix the melons and apricots together, then store in an airtight container and chill in the refrigerator until needed.
  • For the lime cardamom syrup: In a small saucepan, mix lime juice, caster sugar, and cardamom pods over low heat until sugar dissolves. Increase heat to medium, bring to a boil, then simmer uncovered for 5 minutes until syrup thickens. Cool, store in a sealed container in the fridge.
  • Before serving, transfer the prepared fruit to a bowl. Heat the lime cardamom syrup and drizzle it over the fruit. Gently mix with a large metal spoon to incorporate.
  • Take out the passionfruit ice glasses from the freezer. Divide the fruit mixture evenly among the glasses. Drizzle any extra syrup on top before serving.
