Indulge in a decadent, flavorful cake that will elevate any celebration.
Ingredients:
  • Melted butter, to grease
  • 250g butter, at room temperature
  • 430g (2 cups) caster sugar
  • 6 eggs
  • 150g (1 cup) plain flour
  • 75g (1/2 cup) self-raising flour
  • 85g (1 cup) desiccated coconut
  • 160ml (2/3 cup) coconut milk
  • Fresh coconut, shaved, to serve
  • 125ml (1/2 cup) fresh passionfruit pulp
  • 40.00 gm caster sugar
  • 1 tsp finely grated lemon rind
  • 1 x 250g pkt cream cheese, at room temperature
  • 125g (1/2 cup) sour cream
  • 80g (1/2 cup) icing sugar mixture
Instructions:
  • Preheat your oven to 180°C. Grease 2 round 20cm cake pans with melted butter, then line the bases and sides with non-stick baking paper.
  • In a bowl, cream together butter and sugar until light and fluffy using an electric beater. Mix in eggs one by one, beating well after each addition, until incorporated. Gently fold in the combined flours and coconut, followed by the coconut milk. Divide the batter among lined pans and bake for 1 hour or until a skewer inserted comes out clean. Let cool on a wire rack for 30 minutes before unmolding.
  • In a saucepan over high heat, combine passionfruit, sugar, and lemon rind. Bring to a boil and cook, stirring occasionally, for 3-5 minutes until the syrup thickens. Allow it to cool before using.
  • Combine cream cheese, sour cream, and icing sugar in a bowl and beat with an electric mixer to make the frosting.
  • With a large serrated knife, carefully cut the top off each cake and then slice each cake in half horizontally. Place one cake layer on a cake stand. Spread one-sixth of the cream cheese mixture over it and drizzle one-third of the passionfruit syrup. Continue layering with the remaining cake layers, half of the cream cheese mixture, and the rest of the syrup. Finish by spreading the remaining cream cheese mixture over the top and sides of the cake, then garnish with coconut before serving.
