Create quick and tasty individual desserts with just 5 ingredients in 15 minutes.
Ingredients:
  • 1 x 460g pkt Double Unfilled Sponge Cake
  • 40.00 ml Lemon curd
  • 80g (1/2 cup) icing sugar mixture
  • 20.00 ml canned passionfruit pulp
Instructions:
  • Trim the edges of the sponge cakes with a serrated knife to create a square shape. Cut each cake into 4 squares, then slice each square in half horizontally. Place the bases on serving plates.
  • Whisk the cream in a bowl with a balloon whisk until firm peaks form.
  • Spread the tangy lemon curd over each cake base, then layer on the fluffy cream before adding the top cake layer.
  • Sift the icing sugar into a small bowl, then combine with the passionfruit pulp until smooth. Spread the mixture over the cakes, letting it gently cascade down the sides. Serve promptly.
