Passover essential: Sweet & savory brisket, seared then slow-baked for fork-tender perfection.
Ingredients:
  • 1/4 cup packed brown sugar
  • 3 cloves garlic, finely chopped
  • 1 cup red wine
  • 3/4 cup chili sauce
  • 1/4 cup ketchup
  • 3 tablespoons apple cider vinegar
  • 1 brisket (3 1/2 lb), trimmed
  • 3 onions, thinly sliced
  • 3 sprigs fresh thyme
Instructions:
  • Preheat oven to 300°F. Combine brown sugar, garlic, wine, chili sauce, ketchup, and vinegar in a small bowl, whisking until fully blended. Set aside.
  • Preheat a 12-inch skillet over medium-high heat for 2 minutes. Pat dry the beef brisket with paper towels and season each side with salt and pepper. Sear the beef for 2 minutes on one side until it forms a dark crust, then flip and sear the other side.
  • Place the beef in a large roasting pan and generously coat it with sauce, sliced onions, and fresh thyme sprigs. Cover the pan tightly with foil and bake for 3 hours until tender.
  • Let the beef rest for 10 minutes before slicing it across the grain into juicy, tender slices. Serve the succulent beef with caramelized onions and rich pan drippings for an unforgettable meal.
