Savory penne pasta with squash blossoms, Parmesan, parsley, and saffron for a gourmet delight.
Ingredients:
  • 1 (8 ounce) package penne pasta
  • 15 fresh zucchini blossoms
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 bunch fresh parsley, chopped
  • 1 teaspoon saffron threads
  • 2 tablespoons fine cornmeal
  • 2 tablespoons grated Parmesan cheese
  • salt and freshly ground black pepper to taste
Instructions:
  • - Boil a large pot of salted water until it shimmers. Cook penne until al dente, about 11 minutes. Reserve 1/2 cup of cooking water before draining.
  • Prepare the zucchini blossoms by cleaning and rinsing them, removing the inner parts like the stigma or anthers, then coarsely chop the flowers.
  • In a large skillet over medium-low heat, warm olive oil. Sauté garlic until it starts to brown, about 3 to 5 minutes. Add pasta water, parsley, and saffron. Gently fold in zucchini blossoms and cook until tender, approximately 10 minutes. Sprinkle cornmeal, stirring constantly until mixture thickens, around 5 minutes.
  • Fold penne gently into the fragrant zucchini blossom mixture, then generously sprinkle with Parmesan cheese, salt, and pepper.
