Ingredients:
  • 18.20 gm olive oil
  • 150g thickly sliced pancetta, cut into thin matchsticks
  • 500g tagliatelle
  • 6 free-range egg yolks
  • 100ml thickened cream
  • 30g unsalted butter
  • 62.50 ml flat-leaf parsley, finely chopped, plus extra to serve
  • 50g pecorino
  • 50g parmesan
Instructions:
  • In a spacious non-stick pan over medium heat, warm the oil, then cook the pancetta for 10 minutes until it becomes crisp.
  • Cook the pasta in a large saucepan of boiling salted water following the instructions on the packet. Drain the pasta.
  • Gently beat together eggs and cream in a bowl.
  • Combine butter and parsley with pancetta. Add pasta and cheeses, tossing well. Remove from heat and swiftly add cream mixture. Gently toss to allow pasta's heat to cook the egg slightly for a creamy sauce. Season and serve with extra parmesan and parsley.
