Try this delicious Pasta Melanzane recipe - a flavorful dish combining eggplant, spinach, and Parmesan cheese for a quick and satisfying meal.
Ingredients:
  • 0.75 cup bow tie (farfalle) pasta
  • 1 medium eggplant, peeled and cubed
  • 4 tablespoons olive oil
  • 4 cloves garlic, finely chopped
  • 1 tablespoon butter
  • 3 cups fresh spinach, chopped
  • 3 tablespoons fresh lemon juice
  • salt and pepper
  • 0.75 cup grated Parmesan cheese, divided
  • cracked black pepper to taste
Instructions:
  • Bring a large pot of salted water to a boil, then cook pasta until al dente, 8 to 10 minutes. Drain and keep warm.
  • Heat olive oil and butter in a skillet over medium heat. Add garlic and cook until softened. Stir in eggplant and cook undisturbed for 5 minutes. Stir and continue cooking until tender, about 5 more minutes.
  • Combine fresh spinach and generously season with salt and pepper. Sauté for 3 minutes, stirring occasionally. Add in the cooked and drained pasta, freshly squeezed lemon juice, and 1/2 cup of Parmesan cheese. Gently mix and then transfer the dish to a serving platter. Finish by sprinkling the remaining cheese and cracked black pepper on top.
