Savory Southern Italian classic bursting with salty, spicy, and tangy flavors.
Ingredients:
  • 3 garlic cloves, thinly sliced
  • 6 anchovies in oil, drained, chopped
  • 40.00 ml salted capers, rinsed
  • 150g black olives, halved if large
  • 1 long red chilli, seeds removed, chopped
  • 1 tsp chilli powder
  • 1 tsp dried oregano
  • 400g can chopped tomatoes
  • 400g spaghetti
  • 250.00 ml flat-leaf parsley leaves, chopped
Instructions:
  • In a frypan over medium heat, warm the oil. Sauté garlic for 1 minute until fragrant. Stir in anchovy, capers, olives, fresh and dried chilli, and cook for 2-3 minutes. Add oregano and tomato, then simmer on low for 10 minutes until thickened. While simmering, cook spaghetti in a pot of boiling salted water as per package instructions. Drain.
  • Mix in the parsley with the sauce and then add the pasta. Toss everything together to mix well before serving.
