Quick and delicious pasta salad recipe.
Ingredients:
  • 1 x 80g pkt baby rocket leaves
  • 1 x 500g pkt dried shell pasta
  • 1 lemon
  • 150g goat's cheese, crumbled
  • 36.40 gm olive oil
  • 40.00 ml baby capers
Instructions:
  • Boil the pasta in a generously salted large saucepan until al dente following the packet instructions. Drain thoroughly and transfer to a spacious heatproof bowl.
  • Zest the lemon using a zester or vegetable peeler, making sure to avoid the bitter white pith. Then juice the lemon.
  • Top the warm pasta with crumbled goat's cheese, lemon zest, lemon juice, oil, and capers. Toss everything gently until well combined. Taste and season with salt and pepper. Cover the pasta with plastic wrap and let it sit for 15 minutes to cool slightly.
  • Toss in the rocket leaves delicately until mixed and ready to serve.
