Pasta with lemony sauce

Ingredients:
  • 500g plain flour
  • 3 large eggs
  • 2 egg yolks
  • 1 lemon, juiced, plus extra to season
  • 60.00 ml grated parmesan
  • 189.38 gm thin cream
Instructions:
  • On a workbench, create a mound with sifted flour and make a well in the center. Add eggs one at a time while incorporating flour from the center out. Adjust by adding an extra egg if too dry, or more flour if too sticky. Knead gently without overworking. Cut dough into strips and pass through the pasta machine multiple times, starting on the widest setting, then use the fettuccine cutter.
  • For the zesty sauce, combine all ingredients, adjusting seasoning and adding more lemon juice to taste.
  • Cook pasta until perfectly tender, drain, and mix with sauce. Add cooked chicken strips for extra flavor, if preferred.
