Saute garden-fresh Swiss chard with olive oil, garlic, and capers for a quick and flavorful Italian dish.
Ingredients:
  • 0.33333334326744 pound whole-wheat spaghetti
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 bunch Swiss chard, chopped
  • 1 teaspoon capers
  • salt and pepper to taste
  • 1 teaspoon lemon juice, or to taste
  • 0.25 cup grated Parmesan cheese, or to taste
Instructions:
  • Fill a large pot with salted water and bring to a rolling boil. Add spaghetti and cook until al dente, about 8 minutes. Drain in a colander in the sink.
  • Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until softened. Add Swiss chard and cook until stems are tender. Use some hot pasta water to steam the chard in the covered pan.
  • Combine the hot spaghetti with the chard mixture and capers. Season with salt and black pepper to taste, and add a refreshing splash of lemon juice, if desired. Serve by sprinkling with Parmesan cheese.
