30-minute gemelli pasta with Swiss chard and bacon - a delicious crowd-pleaser!
Ingredients:
  • 12 ounces gemelli pasta
  • 1 large bunch Swiss chard
  • 6 slices thick-cut bacon, diced
  • 0.5 medium onion, halved and sliced
  • 1 clove garlic, minced, or more to taste
  • 2 tablespoons extra-virgin olive oil
  • 0.25 cup shredded Parmesan cheese, or to taste
Instructions:
  • 1. Bring a pot of salted water to a vigorous boil. Cook gemelli until al dente, about 8 to 10 minutes. Drain and set aside.
  • While the gemelli is cooking, prepare the Swiss chard by removing and slicing the stems, then cutting the leaves in half lengthwise and thinly slicing them.
  • In a Dutch oven or large skillet over medium-high heat, crisp up the bacon until lightly browned for 4 to 5 minutes. Toss in the onion and garlic, cook and stir for 2 minutes. Add chard stems and cook for 1 minute; then add the leaves and cook until wilted, about 2 more minutes.
  • Combine warm gemelli and olive oil with the chard mixture, stirring occasionally until heated through for about 2 minutes. Garnish with Parmesan cheese before serving.
