Beans and Greens Tartine

Savory bacon, beans, Swiss chard, garlic, and cheesy goodness unite in a delectable French tartine.
Ingredients:
  • 4 thick slices French bread
  • 1 bunch Swiss chard, stems removed
  • zest from 1 lemon
  • salt and freshly ground black pepper to taste
  • cayenne pepper to taste
  • 2 slices bacon, cut into 1/2 inch pieces
  • 0.25 cup sliced green onions
  • 0.25 teaspoon dried oregano
  • salt to taste
  • 1 (12 ounce) can pinto beans, drained and rinsed
  • 2 tablespoons water, plus more as needed
  • 1 lemon, juiced
  • 6 ounces pepper Jack cheese, grated
  • 1 red Fresno chile, thinly sliced
  • 0.25 cup thinly sliced green onions
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Coat both sides of the bread with a generous drizzle of olive oil.
  • Bake until perfectly golden brown, around 20 minutes in the preheated oven.
  • Bring a pot of salted water to a vigorous boil. Cook Swiss chard for 2 minutes. Quickly cool down in cold water, drain, and gently press out any excess water. Roughly chop.
  • In a skillet over medium heat, heat olive oil and sauté garlic until fragrant, about 20 seconds. Add chard and mix well. Turn off heat, then season with lemon zest, salt, pepper, and cayenne. Stir to combine and set aside off the stove.
  • In a large skillet over medium-high heat, crisp the bacon by turning occasionally until well browned, about 10 minutes. Remove bacon with a slotted spoon, drain on paper towels, then crumble once cooled.
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and cover a baking sheet with aluminum foil.
  • Reserve 1 to 2 tablespoons of bacon fat in the skillet. Heat over medium-high heat and add green onions, cooking for 1 minute. Stir in cumin, oregano, and salt. Add beans, combine, and pour in water. Bring to a simmer. Mash beans to preferred smoothness using a potato masher. Adjust texture with water if needed, and season with more salt to taste.
  • Evenly spread the bean mixture over the 4 pieces of toast. Layer with chard, crumbled bacon, a drizzle of lemon juice, and a sprinkle of freshly grated pepper Jack cheese.
  • Bake until the cheese turns golden brown and the tartines are heated through, approximately 12 minutes in the preheated oven.
  • Garnish with Fresno chile pepper slices and green onions before serving.
