Savory beans and greens paired with crusty bread - a versatile dish for any meal.
Ingredients:
  • 36.40 gm extra virgin olive oil, plus extra to serve
  • 1 large brown onion, halved, sliced
  • 1/4 tsp dried chilli flakes, plus extra to serve
  • 510.00 gm vegetable liquid stock
  • 2 x 400g cans cannellini beans, drained, rinsed
  • 62.50 ml finely grated parmesan, plus extra to serve
  • 4 slices white crusty bread, toasted, to serve
Instructions:
  • In a large, deep frying pan over medium heat, heat oil until shimmering. Add onion and cook, stirring occasionally, for 5 minutes until softened. Stir in garlic and chili and cook for 1 minute until fragrant.
  • Pour in the flavorful stock and bring it to a gentle simmer. Drop in the hearty beans, then lower the heat to medium-low. Let it cook uncovered for 15 minutes, or until the mixture thickens slightly.
  • In a pan, toss in fresh spinach and grated parmesan. Sauté for 2 minutes until spinach wilts and parmesan melts. Season with salt and pepper, drizzle with a bit more oil, and sprinkle extra chili and parmesan. Serve alongside crusty bread.
