Traditional Spanish soup with turnips, greens, white beans, ham, and sausage - a hearty and comforting meal for chilly nights.
Ingredients:
  • 2 tablespoons olive oil
  • 1 medium onion, minced
  • 8 cloves garlic, minced
  • 2 Spanish chorizo links, sliced
  • 2 thick slices smoked ham, diced, or more to taste
  • 3 medium potatoes, peeled and diced
  • 2 medium turnips, peeled and diced
  • 8 cups chicken stock
  • 1 (15 ounce) can white cannellini beans
  • 3 cups chopped turnip greens
Instructions:
  • In a stockpot over medium heat, sauté onions in oil until translucent, for about 5 to 10 minutes. Stir in garlic and cook until fragrant, about 1 to 2 minutes.
  • Sauté the chorizo and ham until lightly browned, about 3 to 4 minutes. Add the potatoes and turnips, then pour in the stock and bring to a boil. Cover and simmer over medium-low heat until the potatoes and turnips are tender, about 20 minutes.
  • Turn up the heat to medium and add the beans and greens, stirring until the greens are tender, for at least 3 minutes.
