Flavorful chicken soup with veggies, garlic, and cilantro.
Ingredients:
  • 5 pounds chicken leg quarters
  • 2 gallons water
  • 2 tablespoons minced garlic
  • 2 tablespoons salt
  • 1 tablespoon garlic powder
  • 1 cube chicken bouillon
  • 4 large carrots, peeled and cut into large chunks
  • 4 large potatoes, peeled and cut into large chunks
  • 4 zucchini, cut into large chunks
  • 1 chayote, cut into large chunks
  • 1 large white onion, cut into large chunks
  • 0.5 bunch fresh cilantro, chopped
Instructions:
  • Add flavorful minced garlic, a hint of salt, and aromatic garlic powder to intensify the taste of the chicken legs in the large stockpot, ensuring they are completely covered with water.
  • Bring to a vigorous boil, then reduce heat to a gentle simmer. Cook until the chicken is tender and easily falls off the bones, approximately 1 to 2 hours.
  • Dissolve chicken bouillon cube in the pot, then add carrots, potatoes, zucchini, chayote, and white onion. Simmer over medium-low heat until carrots and potatoes are tender, for 45 minutes to 1 hour.
  • Infuse the soup with freshly chopped cilantro, let it simmer for 5 minutes, then serve.
