Citrus-infused black bean and veggie salad - vibrant, quick, and bursting with flavor!
Ingredients:
  • 3 tablespoons fat-free Italian dressing
  • 1/2 teaspoon grated lime peel
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro
  • 1 can (15 oz) black beans, drained, rinsed
  • 3 1/2 cups mixed salad greens (about half of 10-oz bag)
  • 1 medium tomato, cut into wedges
  • 1/2 avocado, pitted, peeled and chopped (1/3 cup)
Instructions:
  • Combine the dressing, lime peel, lime juice, and cilantro in a 1-cup measuring cup.
  • Combine beans, salad greens, and tomato in a large bowl. Drizzle dressing over the salad and toss until well coated. Garnish with fresh avocado on top.
