Black Bean and Green Chile Pie with Cheddar and Tortilla Crust - A zesty twist on a classic savory pie, loaded with bold flavors of black beans, green chiles, tomatoes, and spices, crowned with gooey melted cheddar and crispy tortilla crust. ¡Delicioso!
Ingredients:
  • 2 (15 ounce) cans black beans, drained
  • 1 (4 ounce) can diced green chilies, drained
  • 1 (14.5 ounce) can peeled and diced tomatoes, drained
  • 3 cloves garlic, crushed
  • 2 (9 inch) unbaked pie crusts
  • 1 (16 ounce) package Cheddar cheese
  • 10 (6 inch) flour tortillas
Instructions:
  • Preheat oven to 375°F (190°C) for the perfect cooking temperature.
  • In a large bowl, combine beans, green chiles, tomatoes, onion, and garlic. Line a 9-inch pie pan with one pie crust. Spread 1/4 of the bean mixture over the crust, top with cheese, and lay a tortilla. Repeat layering with remaining mixture, cheese, and tortillas. Finish with the second pie crust, flute edges, and make slits on top before baking.
  • Place in a hot oven for 45 minutes, or until the crust turns a beautiful golden color.
