Easy Mexican black bean quesadillas made in a pie maker - great for lunchboxes!
Ingredients:
  • 6 x 22cm flour tortillas
  • 400g can black beans, rinsed, drained
  • 85g (1/3 cup) bought tomato salsa
  • 120g finely grated cheddar
  • Fresh tomato salsa, to serve (see note)
  • Chopped fresh coriander leaves, to serve
  • Sour cream, to serve
  • Lime wedges, to serve
Instructions:
  • Cut two 9cm and two 8cm discs from each tortilla using metal pastry cutters or a small sharp knife, using small bowls as a guide. Spray one side of each disc with oil and cover with plastic wrap to prevent drying out.
  • Mix the beans and store-bought salsa in a bowl. Heat up a pie maker. Put a 9cm tortilla disc, with the oiled side down, in each pie maker hole. Spoon a heaped tablespoon of mixture into each tortilla. Sprinkle with 1 tablespoon of cheese. Cover with an 8cm tortilla disc, oiled side up. Close the lid and cook for about 5 minutes until the quesadillas are golden brown and the filling is heated through.
  • Remove the quesadillas from the pan and place them on a wire rack. Repeat with the rest of the tortilla discs and mixture in two more rounds.
  • Garnish the quesadillas with a vibrant fresh salsa and sprinkle with fragrant coriander. Enjoy with a dollop of sour cream and a squeeze of zesty lime.
