Black Bean and Salsa Soup

Blend black beans, salsa, veggie broth, and cumin. Heat in pot until bubbly. Top with sour cream and green onion.
Ingredients:
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1.5 cups vegetable broth
  • 1 teaspoon ground cumin
  • 4 tablespoons sour cream
  • 2 tablespoons thinly sliced green onion
Instructions:
  • Combine beans, broth, salsa, and cumin in a food processor or blender and blend until smooth.
  • Warm the bean mixture in a saucepan over medium heat until it is fully heated.
  • Serve the soup into 4 bowls, and garnish each with a dollop of sour cream and a sprinkle of green onion.
