Whip up a delicious black bean soup with canned beans, veggie broth, salsa, and gooey Cheddar cheese.
Ingredients:
  • 1 (15 ounce) can black beans, rinsed and drained
  • 0.5 cup mild salsa
  • 0.5 cup vegetable broth
  • 0.25 teaspoon salt, or to taste
  • 0.25 cup shredded Cheddar cheese
  • 1 tablespoon sour cream, or to taste
Instructions:
  • Mash black beans until smooth in a bowl, then mix in salsa. Transfer to a saucepan over medium heat. Add vegetable broth and stir well. Simmer until slightly thickened to your liking, about 10-15 minutes.
  • Season the soup with salt, then generously sprinkle Cheddar cheese over the top. Gently stir to melt the cheese into the soup. Allow it to further heat through for 1 to 2 minutes. Serve the soup in 2 bowls and finish by adding a dollop of creamy sour cream to each bowl. Enjoy!
