Whip up quick and tasty Mexican-inspired tostadas with seasoned black beans, cheese, and green chiles for a satisfying vegetarian meal in no time!
Ingredients:
  • 1 (16 ounce) can refried black beans
  • 1 (16 ounce) can black beans
  • 1 (4 ounce) can diced green chiles
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 8 corn tostada shells
  • 2 cups shredded Monterey Jack cheese
  • 0.25 cup salsa, or as desired
  • 0.25 cup shredded lettuce, or as desired
  • 0.25 cup sour cream, or as desired
  • 0.25 cup guacamole, or as desired
Instructions:
  • Position the oven rack 6 inches away from the heat source and preheat the broiler in the oven.
  • In a saucepan, mix together refried black beans, black beans, green chiles, garlic powder, chili powder, cayenne, salt, and pepper. Heat on medium for 3 to 4 minutes until warm and well blended.
  • Lay tostada shells on a baking sheet without grease and divide bean mixture evenly between them. Sprinkle with Monterey Jack cheese.
  • Broil in the hot oven until the cheese is melted, being vigilant to prevent the tostadas from burning, for 1 to 3 minutes.
  • Garnish right away with salsa, lettuce, sour cream, and guacamole before serving.
