Swiss Chard and Pecan Pesto

Delicious pesto made with pecans and Swiss chard for a unique twist on a classic recipe.
Ingredients:
  • 0.5 cup olive oil, divided
  • 10 leaves Swiss chard, chopped
  • 4 cloves garlic, chopped
  • 1 cup basil leaves
  • 1 cup pecans
  • 0.5 teaspoon sea salt
  • 1 tablespoon lemon juice
  • 1 (3 ounce) package grated Parmesan cheese
  • salt and ground black pepper to taste
Instructions:
  • In a skillet over medium heat, sauté Swiss chard and garlic in 2 teaspoons of olive oil until the chard leaves wilt, about 3 to 5 minutes. Remove from heat and let cool.
  • Blend basil, pecans, sea salt, Parmesan cheese, and remaining olive oil in a food processor until fully combined. Pulse in Swiss chard mixture and lemon juice until smooth. Season with salt and pepper to taste.
