Delicious Swiss chard and garbanzo beans paired with onions, tomatoes, and lemon juice. A versatile vegetarian main or vibrant side for any meal.
Ingredients:
  • 2 tablespoons olive oil
  • 1 shallot, chopped
  • 2 green onions, chopped
  • 0.5 cup garbanzo beans, drained
  • salt and pepper to taste
  • 1 bunch red Swiss chard, rinsed and chopped
  • 1 tomato, sliced
  • 0.5 lemon, juiced
Instructions:
  • In a large skillet, warm olive oil over medium heat. Add shallot and green onions, cook and stir for 3 to 5 minutes until soft and fragrant. Mix in garbanzo beans, season with salt and pepper, heat through. Add chard to the pan and sauté until wilted. Top with tomato slices, lemon juice, and heat briefly. Plate, season with salt and pepper to your liking.
