Swiss Chard with Olives

Sautéed leafy greens with green olives, capers, green onions, and fragrant rosemary.
Ingredients:
  • 1 ounce pitted green olives (about 10 medium sized), roughly chopped or sliced
  • 1/2 teaspoon fresh rosemary, minced
  • 1 green onion or shallot, chopped
  • 1/2 teaspoon capers
  • Extra virgin olive oil
  • 1 large bunch Swiss chard, rinsed and patted dry
  • Freshly ground black pepper to taste
Instructions:
  • Prepare a flavorful olive mixture by combining olives, rosemary, green onion, capers, and a drizzle of olive oil. Allow the mixture to marinate as you get the chard ready.
  • Prepare chard: Separate the leaves and stems by cutting along the edges of the main stem of each leaf. Slice the stems into 1/2-inch pieces and the leaves into 1-inch crosswise ribbons. Keep them separate for cooking.
  • In a large non-stick sauté pan over medium-high heat, heat a tablespoon of olive oil. Once the oil is hot, add the chard stems and cook for a few minutes, stirring frequently, until they start to soften.
  • Stir in the olive mixture, then add the chopped chard leaves to the pan. Toss gently to coat the chard with olive oil and cook for 1 more minute.
  • Cover and simmer: Cover the pan and simmer over low heat for a few minutes. Occasionally lift the cover to gently turn the chard leaves. Once all the chard has wilted, remove from heat and season with black pepper to taste.
