Fresh tzatziki dip with Swiss chard, mint, olive oil, lemon, and garlic. Perfect for dipping pita chips.
Ingredients:
  • Tzatziki yogurt dip:
  • 3 to 4 large leaves of Swiss chard, ribs removed
  • 1 cup plain Greek yogurt
  • 1 1/2 tablespoons fresh mint leaves, chopped
  • 1 clove garlic, finely chopped
  • 1/4 teaspoon salt
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • Pita chips:
  • 3 (9-inch diameter) pita breads, cut like a pie into triangles
  • Olive oil for drizzling on to the pita bread
Instructions:
  • Prepare the chard: Boil a small saucepan of water. Add chard leaves and cook until tender, around 3 minutes. Set up an ice bath. Transfer cooked chard to the ice bath to cool. Squeeze out excess water, then chop the chard.
  • Mix together the Greek yogurt, chopped chard, fresh mint, garlic, salt, olive oil, lemon zest, and lemon juice in a medium bowl. Refrigerate until needed (can be prepared up to 3 days in advance).
  • Prepare the pita bread: Cut it into triangles and place them in a single layer on a broiling pan. Drizzle olive oil over the pita wedges and evenly spread it with a pastry brush. Broil until toasted, about 5 minutes. Allow to cool for a minute before serving.
  • Drizzle the tzatziki with a touch of olive oil and enjoy with crispy toasted pita wedges. Recipe inspired by Martha Stewart Living Magazine.
