Swiss Chard Sauteed with Lime

Quick and tasty Swiss chard recipe, perfect as a side or meal with rice.
Ingredients:
  • 1 bunch Swiss chard, stems and leaves separated
  • 3 tablespoons extra-virgin olive oil, divided
  • 0.5 teaspoon kosher salt
  • 0.5 lime
Instructions:
  • Cut the chard stems into 1/2-inch pieces. Roll and slice the chard leaves into 1/2-inch strips, then chop the strips into halves.
  • Heat half of the olive oil in a large non-stick skillet over medium heat. Saute chopped chard stems for about 1 minute. Add chard leaves, drizzle with remaining olive oil, and cook together for another minute. Keep stirring until leaves are nearly wilted, about 4-5 minutes. Remove from heat, sprinkle with kosher salt, squeeze lime over the chard, and mix well to season evenly.
